Let’s be honest, summer isn’t always ideal for training or racing. But when it does arrive we certainly know how to make the most of it. Firing up the barbecue, filling the paddling pool and packing the freezer full of icy sweet treats – it doesn’t get better than this. Just don’t forget to wear sunscreen. Healthy Ice Pop Recipes
To make ice pops you’ll need a mold and some wooden sticks but you should be able to find these in your local supermarket or online. Alternatively you could try using small yogurt containers.
Strawberries and Cream Ice Pop
A summer classic, you just can’t beat strawberries and cream – but you can make them more fun to eat. Blend together 50ml milk and a couple of handfuls of strawberries and finish off with a few drops of honey. Add to the molds and freeze overnight.
Top Tip: Chop up some of the leftover strawberries and add them to the molds, the chunks of fresh fruit will make for a tasty surprise.
Avocado Ice Pop
Hear us out, Mudder. We know this sounds strange but avocados are super healthy and deliciously creamy, what’s not to like? Simply blend together a ripe avocado and 200 ml of plain yogurt. Add lime juice and honey to taste, add to molds and freeze.
Mango and Chilli Ice Pop
If the temperature is rising why not get a little tropical? You’ll need around 300g of mango flesh, some lime juice and a small red chilli (or powder if you’d prefer). Blend the mango until completely smooth and stir in the finely chopped chilli and lime juice to taste. Pour, freeze and enjoy.
